Paya (Hoove) – Goat (8/10 pieces) (ଖାଶି ଟାକଂ)
Onion – 2 / 3 big (ପିଆଜ)
Ginger and Garlic paste -3tbsp (ଅଦା ରଶୁଣ ବଟା)
Oil/Ghee (ତେଲ କିମ୍ବା ଘିଅ)
Posto- 2tsp (ପୋସ୍ତ)
National Paya Spice mix Masala from market (You can use the ground spices directly ingredients are : Salt, Red chilli, Coriander, Cardamom, Cumin Seed, Black peeper, Turmeric, Mace, Nutmeg, Cinnamon, Bay leaf, Clove)
Soak the posto overnight.
Make fine paste of Posto, 1onion together.
Clean up the Paya in warm water.
Boil in 8/10 glasses of water for 5/10mins.
Drain the paya & keep aside.
In a big pressure cooker, take 8 glasses of water, washed Paya, 2tbsp ginger-garlic paste followed by 2tbsp Paya spice mix or your homemade ground spices mix.
Bring to boil cook till Payas are tender. (Approx. 40/50 min in pressure cooker
Or 4-6 hours in Handi )
Heat oil/Ghee in a big pan, add chopped onions and fry till translucent.
Add posto paste, curd ,Kashmiri red chilli powder, 3/4 green chilly (optional) , remaining 3/4 tbsp Paya spice mix & Salt to taste.
Fry until the oil separates from gravy.
Add the boiled Payas to the gravy, cook for sometime, then add the yakhni water (the water and spice mix in pressure cooker you had boiled paya)
Cook on low flame for 15/20 mins.
Delicious Paya is ready.
Garnish with fresh coriander leaves,finely chopped Ginger and Green chilly.
Serve hot with Hot Naan/Tandoori Roti.
