Process of koli achaar.
Step 1: Add salt n haldi to koli n keep aside fr 2 days.
Step 2: Aftr two days. Keep under sulight fr 7 /8 days till water dry from d koli then add imli paste with it n rest fr 1 day .
Step 3: Take a pan n heat little mustard oil add hingu then add guda(Sugar) when it melt add jujube (Bara koli) and add powder of roasted cumin, mustard, fenugreek, redmirch (jeera, sorisa, methi saunf, redmirch) and mix properly and off the gas after cool pack it in container .

BaraKoli ku dhoiki safa karideba,sethiru denfa chhindei debe . Ta pare 2 days khara re sukhei debe.
Then, chuli re chini,tentuli rasa,haldi gunda,salt,lanka gunda dei paga baneidebe ..ta pare sei mix ku thanda karidebe.
Thanda heigale Barakoli re misei debe. Then, sethire hengu,sorisa tela, methi au panamadhuri dei golei debe.
If needed, can add some preservative . Then keep in the sun for 2 more days and Enjoy!!!
